Foil Roasted Naked Salmon with Orange and Fennel

Our chefs and customers love using Stew Leonard’s Naked Salmon in this dish!  Our Naked Salmon is antibiotic and chemical free, but costs less than half of what you would pay for wild Alaskan salmon.  This is a sophisticated but surprisingly simple super!

To prepare: two packages

 

1. Place two of the sheets of foil on your cutting board or counter, fold the third sheet in half and place in the middle and repeat this for second serving.

 

2. Season the center of each of the foil with a tbsp of the olive oil, reserve the rest.

 

3. Place ¼ of the sliced fennel, ¼ of the sliced orange and the fennel frond directly on the foil.

 

4. Place each salmon portion directly on top of the fennel & orange, season salmon with salt and pepper, top each piece of salmon with the remaining fennel and orange, place ½ the red onion, ½ the ginger and ½ the jalapeno between both portions, now fold the edges on the center piece of foil to hold the liquids.

 

5. Top off each portion with the orange zest, olive oil and orange juice.

 

6. Fold and seal the remaining sheets of foil one piece at a time, place foil packets on a med high BBQ grill, close the lid and cook for about 12 to 15 minutes, pop the foil and serve.

 

If Using Oven:

Preheat oven to 375° and cook for 12 to 15 minutes.
