To prepare:
1.  In a large sauté pan on medium high heat, sweat red onion, jalapeno and peppadew in extra virgin olive oil for 2 to 3 minutes.


2.  Add the brandy and deglaze the pan for 2 minutes, place lobster tails flesh side down, add the vegetable stock and cover for 2 to 3 minutes.


3.  Take lobster tails out of pan and reserve on the side.


4.  Add strawberries, parsley, scallion and salt & pepper, simmer for 2 to 3 minutes, swirl in whole butter and spoon over the lobster tails.


5.  Serve with red & gold roasted potatoes and grilled asparagus
