Grilled Mexican Street Corn

Perfect for your next backyard cookout, Mexican Street Corn will become a summer staple that's super easy to make at home.

Makes: 6 ears of corn

Prep Time: 5 minutes

Cooking Time: 10-15 minutes

Total Time: 20 minutes

Ingredients

  • 6 ears Corn on the cob, husked and cleaned
  • 1/4 cup Mayonnaise
  • 1/4 cup Stew's Sour Cream
  • 1 Tbsp. Stew's Freshly Chopped Garlic
  • Vegetable Oil, for brushing
  • 1/2 cup crumbled Cotija Cheese
  • Fresh lime juice from 2 medium Limes
  • Stew's Mexican Street Corn Seasoning, as desired
  • Fresh Cilantro, chopped

Directions

  1. Preheat grill to medium-high heat (375°F).

  2. In a medium bowl, add the mayonnaise, sour cream, and garlic. Mix well.

  3. Grill the corn about 10 – 15 minutes, turning occasionally, until corn is cooked and charred.

  4. Generously brush the grilled corn with the mayonnaise mixture then sprinkle with the cotija cheese.

  5. Sprinkle with the lime juice, seasoning, and chopped cilantro.
