Pan-Seared Salmon with Chunky Avocado Salsa
Cool, freshly made salsa is great when served with flavorful salmon. This dish comes together in about 20 minutes, but if you're really short on time, doctor up some of Stew's Fresh Salsa with chunks of avocados and cucumbers

Ingredients
- 1 1/2 cups Grape Tomatoes, halved
- 1 1/2 cups peeled and chopped Cucumber
- 1 small Red Onion, diced
- 1 Avocado, cubed
- 1 Jalapeno Pepper, seeded and minced
- 2 Tbsp. minced fresh Cilantro
- 3 Tbsp. fresh Lime juice
- 1 teaspoon Stew's Kosher Salt, divided
- 1/4 teaspoon Stew's Cayenne Pepper
- 4 (6 oz. each) Stew's Naked Salmon Fillets
- 1 Tbsp. Stew's Unsalted Butter
Directions
- In a large bowl, stir together the tomatoes, cucumber, avocado, onion, cilantro, jalapeno, 2 Tbsp. lime juice, and ½ teaspoon of salt.
- Drizzle the salmon fillets with the remaining lime juice. Sprinkle with the cayenne pepper and ½ teaspoon of salt.
- Add the butter to a large skillet over medium-high heat and cook the fillets for 3-4 minutes on each side. Serve with the salsa.
