Servings: 4-6
Prep Time: 35 minutes
Cooking Time: 20 minutes
Total Time: 55 minutes
Ingredients
- 2 cups cold Water
- 1 teaspoon Stew's Kosher Salt
- One 2 lb. side of skin-on Stew's Naked Salmon Fillet
- 2 Tablespoons Stew's Freshly Chopped Garlic
- 2 Tbsp. fresh Lemon Juice
- 1 Lemon, thinly sliced
- 4 Tbsp. Stew's Unsalted Butter, sliced
- 2 Scallions, sliced, extra for garnish
Directions
Place the water and salt in a large baking dish and stir to dissolve the salt. Place the salmon skin-side up in the dish, cover, and refrigerate for 30 minutes.
Remove the salmon from the brine and pat dry with paper towels. Place skin side down on a large piece of aluminum foil and top evenly with the garlic. Drizzle the salmon with the lemon juice. Layer the top of the salmon with the lemon and butter slices and sprinkle with the scallions.
Fold up the sides of the foil and pinch shut.
Heat a grill to medium-heat (375°F – 450°F).
Place the salmon in foil on the grill, cover, and cook for 12 minutes. Open the packet, cover, and continue to cook for another 5 minutes. Let rest for 5 minutes before serving.
