Cast-Iron Skillet Cheesy Pizza

A super-hot oven and a cast-iron skillet help create a crust that bakes up golden and crisp under a layer of rich tomato sauce and gooey fresh mozzarella.

Servings: 6

Prep Time: 19 minutes

Cooking Time: 25 minutes

Total Time: 45 minutes

Ingredients

  • 1 bag Stew's Freshly Made Pizza Dough

  • 2 Tbsp. Stew's 100% Italian Extra Virgin Olive Oil, plus more if needed
  • 1 teaspoon Stew's Freshly Chopped Garlic
  • 1 cup Stew's Simply Italian Marinara
  • 8 slices Stew's Fresh Mozzarella
  • 1 small bunch torn fresh Basil leaves, for topping
  • Stew's Crushed Red Pepper, to taste

Directions

  1. Let the dough come to room temperature, it will be easier to stretch or roll.

  2. Place a 12-inch cast-iron skillet in the oven and preheat the oven to 500°F and let heat up for 10 minutes.

  3. Flour a work surface then roll or stretch the dough into about a 12-inch circle. It’s fine if a little larger as you can push the edges up the sides of the skillet to create a larger lip.

  4. Carefully remove the skillet from the oven.

  5. Add the olive oil to the skillet and brush over the surface and up the sides of the pan.

  6. Carefully transfer the dough to the skillet: pressing the dough up the edges of the pan slightly.

  7. Mix the chopped garlic into the marinara sauce and spread over the dough.

  8. Layer the mozzarella slices evenly over the sauce.

  9. Add freshly torn basil leaves.

  10. Sprinkle with red pepper flakes to taste.

  11. Brush any exposed dough edges with olive oil for extra browning.

  12. Lower the oven heat to 400°F and bake on the lowest rack until golden brown and crispy, 20 - 25 minutes.
