Whether you’re fueling up for New England or cheering on Seattle, Stew’s chefs have cooked up a flavorful "face-off" for your gameday spread! Our chefs have whipped up two signature wing sauces that bring a taste of both cities to your plate:
The Seattle Side: A sweet and tangy sauce featuring real Washington cherries.
The Boston Side: A bold, savory kick infused with a classic Boston beer.

Crispy Chicken Wings
Stew’s secret to perfectly crispy chicken wings in the oven? They’ve got to be bone dry and coated in baking powder (not baking soda!) to create tiny bubbles that crisp up the skin perfectly. Chef’s tip: wet skin steams…but dry skin crisps!
Ingredients
- Stew's Naked Chicken Party Wings
- 1 tsp. Baking Powder
- 3/4 tsp. Salt

Pre-heat oven to 250°F
- Using paper towels, pat the chicken wings dry. Toss the wings in a bowl with the baking soda and salt.
- Place a wire cooling rack on top of a rimmed baking sheet. This allows hot air to circulate under the wing, preventing a "soggy bottom."
- Bake at 250°F (120°C) for 30 minutes.
- Crank the oven to 425°F (220°C) for another 20–30 minutes until they are golden brown.
- Let the wings sit for 2–3 minutes after coming out of the oven. This allows the skin to set so it doesn't get soggy the moment you hit it with your Seattle Teriyaki or Boston Lager sauce.
- Place wings in a large stainless-steel bowl, pour the sauce around the edges, and toss vigorously to coat.

Boston Lager Buffalo Sauce
Ingredients
- 1 cup Boston Lager, such as Samuel Adams
- 1 cup Hot Sauce
- 4oz. Stew Leonard's Butter
- 2 tsp. Brown Sugar
Directions

Bring lager to a boil and reduce by half

Lower heat and whisk in the butter until it melted

Stir in hot sauce and brown sugar until smooth

Rainier Cherry & Espresso BBQ Sauce
Ingredients
- 1 cup pitted Rainier (or dark sweet) Cherries
- 1/4 cup strong brewed Espresso
- 1/2 cup Ketchup
- 2 tbsp. Balsamic Vinegar
- 1 tbsp. Worcestershire Sauce
- 1/2 tsp. Smoked Paprike
Directions

Simmer the cherries with a splash of water until they break down

Add the espresso, ketchup, vinegar, and seasonings

Use an immersion blender to smooth the sauce, then simmer until thickened
